With the success of cafes in Singapore such as The Coffee Bean and Tea Leaf and Starbucks, hawkers are quick to capitalize on this new trend. Signboards with names such as “Hola Cafeteria”, “The Red House” and “Gourmet Concept” have been spotted. The common words mushrooming all over the island are “café”, “cafeteria” and “restaurant” added at the end part of signboard names. The colors of the signboard are also of brighter shades such as yellow, pink and red.

Hawkers have also blended their own concoctions with local favorites such as Milo, lipton tea and coffee at higher prices. Some have even gone on to add in air-conditioners and open twenty-four hours in a bid for more business. One thing is for sure - the local food scene is now more colorful as there are now more options for foodies.
